Last weekend, the II Green Asparagus Gastronomic Days took place in Churriana de la Vega. These days saw all of the local catering establishments prepare a dish using the green asparagus from the Plain as a star ingredient.
This is a great initiative to promote and encourage this vegetable, which has so many benefits for our bodies and can be cooked in so many forms.
I decided to participate in this initiative by sharing a recipe using these asparagus with you all, so you can also make it at home.
Ingredients:
1 bunch green asparagus
-8 fresh garlic
-300ml fried tomatoes
-3 sausages
1 or 2 eggs per person
Extra virgin olive oil
Elaboration:
Chop the fresh garlic. The asparagus can be cut into small pieces. We will only remove the tender stem. Add a little more virgin olive oil to the pan and season with salt. Mix the ingredients together and add the fried tomatoes after they have been cooked.
Then, we place them in pans that are suitable for the oven. On top, we add the chorizo crumbled without skin and crack the egg. The egg white should be cooked well. However, the yolk must still be tender enough to dip in bread or combine with the rest of the ingredients. Great!
