1 egg
150 g spinach, finely chopped
300 ml milk
200 g flour, sifted
1 teaspoon baking soda
a handful of iceberg lettuce
150 g ricotta cheese
150 g serrano ham
4 spring onions, in rings
50 g nuts, coarsely chopped
sunflower oil
salt and pepper
1. Put the spinach along with the milk, the egg and 1 tablespoon of oil in a blender and mix briefly. Add the sifted flour and the baking powder and season with pepper and salt. Blend everything smooth.
2. Heat oil in a frying pan and fry thin pancakes of the batter.
3. Grease each pancake with ricotta and season with pepper and salt. Siege continues with iceberg lettuce, a slice of serrano ham, spring onions and nuts. Roll the pancakes and cut in bite-sized portions.
