Easier and lean alternative to quiche? This irresistible Spanish tortilla
Fresh every day, A quiche, without the milk, cream and dough? Then you find yourself at a delicious Spanish tortilla. We give the southern omelet with a twist and replaced the potatoes by their sweet variant. Yum! What do you need? (for 4 persons)

1 large sweet potato, cubed
1 preiwit, in half rings
1 clove knolfook, crushed
150 g ham, in strips
olive oil
6 eggs
salt and pepper
2 tsp paprika

this is how you make it :

1. Heat a splash of olive oil in a small, deep non-stick pan and sauté the garlic on a gentle heat for 1 minute before the sweet potatoes and leeks to add. Stir-fry for 5 minutes.
2. Meanwhile, fry in another pan with the serrano ham until crispy.
3. Beat the eggs and season generously with salt and pepper, and paprika.
4. Add the ham to the groentemengsel and pour the eggs over it. Leave on a gentle heat for about 10 minutes yarn.
5. Remove the pan from the heat, place a large plate over the pan (dish should be larger than the pan) and tighten with a powerful movement. Now, slide the tortilla carefully back in the pan so that the bottom yarn. Place after 1 or 2 minutes, reinstall the plate over the pan and turn to. Serve immediately.
