400 g carrots, peeled and sliced
400 g small new potatoes, halved
3 stalks celery, in small cubes
6 shallots, peeled and segmented
200 g smoked bacon strips
4 boerenworsten, halved
300 ml vegetable broth (300 ml water + 1/2 groentebouillonblokje)
4 sprigs of thyme
salt and pepper
1. Fry the bacon strips in butter until golden brown. Add the sausages, shallots and the celery and saute for 10 minutes.
2. Take the small potatoes and carrots under. Pour the broth in and bring to the boil. Season with the thyme, salt and pepper, and leave, with lid on the pan, for a further 20 minutes on a low flame to simmer.
3. Remove the lid from the pan and leave for 5 minutes to simmer. Serve immediately.
