This week, I'm sharing a quick and easy recipe that is both easy to prepare and extremely simple to make. There are many reasons to get in the kitchen with the weekly recipes I share. We will make a potato salad using cooked octopus, spring onions and mayonnaise. Then we will add paprika. It's very rich. It is very rewarding.

Ingredients

1 bag of small microwaveable potatoes

1 cooked octopus leg

1/2 spring onion, 1 small

Extra virgin olive oil

Mayonnaise: 200-250g

1 teaspoon paprika

Explanation

For 7 minutes, heat the potatoes in a microwave at maximum power. Finely chop the spring onions and chop the octopus. You can save a few pieces for decoration later. Combine the mayonnaise and the paprika. Take the potatoes out of the microwave and let them cool down before peeling. Place them in a container. Use a flattened knife to mix the potatoes.

The onion, the octopus, and the mayonnaise are all combined. Mix it together and you have the salad. You can eat it fresh or chilled, with some picos and scolds. Serve it in bowls, or with a serving ring. I finished it with some octopus pieces, chopped chives, sprinkled with paprika, and a bit of extra virgin olive oil.
