I invite you to make a dish that reflects the extreme heat we are experiencing this week. This is a fresh salad made with melon. We will also add Serrano Ham and some cheese. It has been seasoned with extra virgin olive oils, this time from Loja. Also, a little vinegar.
You can always modify the dish to suit your taste. This time I chose to add blue cheese. However, you can also use mozarella cheese balls or any other cheese you prefer for special occasions.
Extra virgin olive oil
The melons are split and then we use a ball punch to make balls. After removing all the pulp, we slice the base of each melon so it can stand up on a plate. Mix the melon balls together with pieces of cheese, chopped Serrano Ham and extra virgin olive oil. Dress it with anchovy vinaigrette. You can substitute the vinegar for any other vinegar. Just add some salt.
Serve the mixture in each half of a melon. As a source, you can also serve it in large melon.
